Ajikiri hocho is the same kind as small Deba hocho of kitchen knife. The maximum capability is demonstrated, when using a fish as a fillet or taking out viscera.
"Aji" means a "horse mackerel" in Japanese. "kiri" means "cutting." That is, it is a kitchen knife which cuts a medium size fish and a small fish.
